Mettez les crozets dans une casserole et couvrez d\u2019eau bouillante \u00e0 ras les p\u00e2tes. Ajoutez les morceaux de c\u00e8pes. Faites cuire les crozets jusqu\u2019\u00e0 ce qu\u2019il n\u2019y ait plus d\u2019eau dans la casserole. N\u2019\u00e9gouttez pas. Ajoutez-y le beurre, le parmesan r\u00e2p\u00e9, les deux \u0153ufs, le sel , le poivre, la muscade et le piment. M\u00e9langez bien cette pr\u00e9paration un peu p\u00e2teuse et laissez la refroidir au moins 4 heures au frigo.<\/p>\n<p>Coupez la mozzarella en 8 m\u00eame si vous n\u2019utiliserez que 4 morceaux.<\/p>\n<p>Mettez la farine dans une assiette creuse. Battez 2 \u0153ufs dans une seconde assiette, salez et poivrez les \u0153ufs. Mettez la chapelure dans une troisi\u00e8me assiette.<\/p>\n<p>Quand la pr\u00e9paration aux crozets est bien froide, s\u00e9parez les en 4 parts \u00e9gales, formez les Arancini, avec vos mains humidifi\u00e9es. Prenez un peu de la pr\u00e9paration aux crozets, dans le creux de votre main, ajoutez un morceau de mozzarella puis refermez afin de garder le morceau de fromage \u00e0 l\u2019int\u00e9rieur et de former une belle boule.<\/p>\n<p>Passez les boules dans la farine, puis dans l\u2019\u0153uf et pour finir dans la chapelure Panko.<\/p>\n<p>Terminez par la friture quelques minutes, id\u00e9alement dans une friteuse. Si non, remplissez la moiti\u00e9 d\u2019une petite casserole d\u2019huile de colza et plongez une \u00e0 une, d\u00e9licatement les Arancini jusqu\u2019\u00e0 une belle coloration.
